healthy smooth very red velvet cupcakes
So… I never told y’all how much I bake or cook. I bake or cook as much as I play and write music, sometimes even more so… to the slight disappointed of my very well-meaning label.
So… I scourged the internet for a good beet root red velvet cake recipe - between people suggesting juice and people testing out hibiscus tea, I blended everything I could find into a recipe I’m very proud of. My biggest goals were - avoiding red food coloring and still getting a bright red color out of these cupcakes…

Here’s what you’ll need:
2 teaspoons apple cider vinegar
500g beetroot, boiled, organic and mushed with the processor
200g whole wheat baking flour
300g baking flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 teaspoon rise (magic baking powder?)
400g brown sugar (try unrefined, from the fairtrade section at your grocer)
50g unsweetened cocoa powder (Nestley Quik if you’re in a pinch :))
150g unsalted butter
150g unsweetened apple sauce (this replaces the entire stick of butter this originally called for)
3 eggs or egg whites, beaten
100ml milk (or soy)
25ml of concentrated hibiscus tea
2 teaspoons vanilla extract
1 pinch salt
Icing
a small box of cream cheese
1 teaspoon vanilla extract
a handful g icing sugar
Instructions
1. Either grate or use a food processor to turn your cooked beets into a mush. I personally cut them with scissors and then use a hand held food processor in a measuring cup. Make a cup of hibiscus tea and let steep for, say, 20 mins (you need it really red!). Melt your butter. Preheat your oven to hot setting.
2. Combine all dry ingredients

4. Fold the wet into the dry ingredients and blend in a food processor. I happen to have the Kitchen Aid Artisan (a very very welcomed birthday present from my friends). Use your food processor to mix all of the icing ingredients together.

5. Fill up your cupcakes in place them in the oven, lowering the heat to 5 setting. I have a gas oven and I placed my cupcakes in the center of the oven. Leave them for 20 mins or until it rises and a knife placed in the center comes out clean.
6. Cool your cupcakes and place the icing. ENJOY!!!
